I had a craving for Portuguese Egg Tarts. And since they are best eaten warm, preferably shortly out of the oven, it’s not something we can buy frozen from the stores or buy from any ordinary bakery. I figured it shouldn’t be that difficult. Wouldn’t the best Portuguese egg tart be just the best flaky pastry plus the freshest eggs and milk? They turned out to be unbelievably easy to make. No blender or mixer required. No long hours of labour in the kitchen. Just a simple hand whisk. They taste more delicate than the commercial ones. It could be because I used free range organic eggs and they are less eggy in taste. But they were deliciously soft, silky and the pastry was wonderfully flakey. Don’t stinge on the ingredients. Use the best frozen buttery puff pastry you can find. You can make puff pastry from scratch, but you’re on your own. That’s not the kind of stuff I do. ...
