I hosted a brunch for my gal pals. And thought it would be fun to serve them a Singaporean style breakfast. Like really authentically Singaporean. Which meant that there must be kaya toast. Every single Singaporean grew up on that. It was bad luck that we were really busy this week and didn’t have time to drive to Chinatown to hunt for kaya. So no choice, I had to make some myself. GULP. If you’ve never made kaya before, you won’t know why I got so nervous. It’s because that small lump of gold that I was going to make takes at least 3 hours of stirring. NON STOP STIRRING. Try walking away for a minute and it will curdle and all the effort you’ve just put in will go to waste. Some people make short cut kaya and use the microwave oven.
