My perfect original cookie recipe, 'Peanut Butter & Chocolate Oatmeal Balls'. Now on the blog!
1) Preheat the oven to 180˚C. Using a hand mixer, cream the sugar and peanut butter until it becomes smooth. Then add in the egg. 3) In another bowl mix together the flour and baking powder. Add this mixture into the sugar & butter mixture, until it is completely incorporated. Add bit by bit in and at this point if the mixture is too dry, add the milk. 4) Using a spatula fold through the oats, sultanas/ raisins, vanilla extract and chocolate until completely combined. 5) Using your hands, scoop up a piece of the cookie dough and roll it into golf-ball sized cookies and lay them on your baking tray. It would be great if you had an ice-cream scooper, so you’ll get equal sized cookies. I should invest in one soon! 6) Bake for 15 mins and let it set in the tray for another 5 minutes, before transferring to a wire rack to cool completely.
